Easy Brown Rice Bowls And Fruit Salad



Brown Rice “Bowl Mixture

1 roll Chorizo

½ can black beans

1c frozen corn

2c brown rice (following directions for liquid and cooking time)

Begin by browning Chorizo.  Once meat mixture is fully cooked add veggies. Do not add any extra seasoning; trust me on this, unless you decide to add more rice. I also like finely chopped cilantro!

Do not cook through add in rice. Add appropriate amount of water cook as per rice cooking instructions cook all mixture. Stir and serve topped with shredded cheese and lettuce. I also like the light sour cream or greek yogurt.


Fruit Salad

2-4c fresh seasonal fruit

1-2TBS honey

¼-1/2tsp lime zest

Add any fresh chopped fruit in season. Drizzle with honey and sprinkle with lime zest. Toss lightly let set or refrigerate until time to serve.
Easy Dressing
Prep: 3 min.
Amounts of each will vary depending on the amount you want to make and how thick you prefer your dressing.
For 2 people it was roughly
1c Greens ( romain, lettuce, spring mixes and spinach are best)
1T olive tapenade
1tsp minced garlic
1/2tsp Italian seasoning
1/8tsp Cajun seasoning
1/8tsp red pepper flake
Pinch salt & pepper Ingredients
I ground in ninja and then added olive oil until it was smooth. Enjoy!
I have done a couple variations often subbing the olive tapenade with jarred pepperoncini peppers for an amazing vinaigrette. You can also use Pickled artichokes and jarred roasted red peppers!

Yellow cake mix or you can use spice.

1 15oz can of pumpkin

3 eggs

When it is mostly baked which will likely take longer then the directions state. Just cook per box directions and check with toothpick. I then topped with marshmallows to toast for dessert. This could just as simply be a fast coffee cake with an oat crumb on top or cinnamon and sugar. Enjoy!
Chocolate Macaroon Protein Bars

Homemade Protein Bars Chocolate Macaroon

Prep: 5 min.

Bake: Approx. 15 min.

5 Scoops S’mores protein powder

2 c quick oats

3 T pecans,

3 T honey

3 T natural Peanut Butter

Add water to good consistency, Mix (here I used the Ninja to blend) & Press into sprayed baking dish.

Reserve a small amount if you want to garnish the top. Or add all mini semi- sweet chips and unsweetened coconut to taste approximately 1/4c each.

Bake at 350 for approx 15 min.

068 Easy Crock Pot Beef
It’s not overly sweet at all or spicy this comes out perfect every time. For BBQ beef use 1-2 bottles of BBQ sauce instead of carbonated beverage. I have tried everything from Sprite and Ginger Ale to DP and Classic Coke makes for the most tender meat. With this I use about a 1/2c BBQ sauce, soda to top edge barely covering beef and 1-2T Tony’s is my favorite but any Cajun works nicely.
Let cook on HIGH for 6-8 hours. If meat looks tough like big piece of rubber don’t fret leave it for another hour and retest it will get tender!
It should be fall apart tender and ready to eat! I often save the broth freeze it for later. To make a quick stew use the broth with trimmings add slice mushrooms, carrots, onion and 1 can of diced tomatoes. Salt and pepper to taste you are done! Enjoy your cozy cold days!




Whole Oat Granola


Prep time 5min.

Bake 30 min. stir every 10 min at 350

4c whole oats

1/4c honey

1/4c maple syrup

¼c brown sugar

1tsp cinnamon

½ tsp any one of the following ground clove, nutmeg or pumpkin spice


Mix all ingredients together and spread on sheet pan. Place in oven and set timer for 10min. stir every 10min. After 30min if you still want it darker you can toast a bit longer this is totally up to you! Once the granola is finished toasting you can add nuts and dried fruits. I like to add the nuts while the pan is hot out of the oven.


Add any of your favorite dried fruit or nuts.  Some delicious combos I’ve tried banana/ walnut, pomegranate/ coconut, and raisin/ nutmeg. You can try any combo! Makes a great gift.
